Cellulose is the most abundant organic compound in the world and is a complex carbohydrate that forms the cell wall of plants, giving them the ability to stand hard, solid, and upright (skeleton). Unlike herbivorous animals like cows or sheep, the human stomach and intestine do not contain the "cellulase" enzyme to break down cellulose. This means the cellulose we eat does not turn into sugar and provide energy in our body; it leaves the bowel undigested.

Fruits consumed with their skin (apples, pears), hard green leafy vegetables (cabbage, celery, broccoli stalks, spinach), root vegetables (carrots), whole grains (oats, whole wheat), and legumes (lentils, chickpeas) are the strongest cellulose stores in nature. When white bread or fruit juice (with the pulp squeezed out) is consumed, one is completely deprived of this cellulose benefit.
